Potato Casserole


2 C mashed potatoes
A dash of cream cheese
½ + c sour cream
House seasoning, recipes follows
1 1/2 small onion, sliced thin
8 T butter
1 ½ c grated cheddar cheese
4 medium potatoes cooked
8 slices bacon, cooked crispy

House seasoning
½ c salt
1/8 c black pepper
1/8 c garlic powder
Mix together and store in airtight container for up to 6 months


Preheat oven 350. Spread mashed potatoes evenly on bottom of casserole dish. Layer sour cream evenly over top. Sprinkle House seasoning, to taste. Sauté onion and bell pepper in butter, evenly layer over top of sour cream. Slice potatoes and layer over onions and peppers. Add butter. Sprinkle house seasoning. Finally top with cheese. Bake for 24-30 minutes. Remove from oven and crumble bacon over top.
