3 T veg oil
¾ C chopped onion
1 (29oz) can black beans
1 ½ c frozen corn thawed
½ c flat leaf parsley chopped
5 10in flour tortillas
8 oz shredded cheese
1 C store bought green enchilada sauce
Preheat oven 400. In skillet, heat oil over medium heat and add onions and cook for 5 minutes. Add half of beans and mash. Stir in the bean liquid from can. In small bowl combine corn, parsley and rest of beans. Spread mixture on tortillas and roll up. Place in greased casserole dish. Add mashed beans and cheese on top. Bake 30 minutes or until cheese is melted. Add enchilada sauce to top.
