My Ugandan Tribute



Matoke is the national dish of Ugandan. When I was in Uganda for two years I hated this stuff... well I pretty much didnt like any Ugandan food. But since I married a Ugandan man and shipped him to America and took away all the food he loved I gotta be nice and try and give him a taste of home. So I attempted to make the traditional foods; matoke, beans, gnut sauce.
















You can't really find the right bananas needed for matoke but you can fake it with plantains. Peel them and stick them on a baking dish and tightly wrap them in foil. I made the mistake of boiling them but you need to bake them to keep in the moisture. Mash just like mashed potatoes.



Beans:
Saute onions, garlic and a tomato of two. Mix with a can of pinto beans and cook down until soft.


Gnut Sauce:
In uganda these are like the only nuts you can find but in america they are red skinned nuts. Palse a handful in a coffee grinder or magic bullet. Mix with about 2 cups of water and put in a shallow skillet to reduce.

 




In Uganda they pretty much but everything on a plate and pile it high and top with gnut sauce. I hope I made my mother in law and husband proud.
